Homeade Chicken Pho Is Great For Lunch

Homeade Chicken Pho is a fabulous Vietnamese dish that will bring on encore calls for more. The cooking time is about three hours and makes six servings. This intense chicken dish calls for the following ingredients:



Roast the onion and ginger in a 400 degree oven.

Boil the water, and add the vegetables, chicken, salt and sugar. Bring to a boil. Simmer until the chicken is done, which is about 30 minutes.

After the chicken is cooked, set on a plate to cool. Debone the chicken, and set it in the refrigerator. Dump the skin and bones back in the pot and simmer for two hours. Strain the chicken broth into a large pot. Cook over the high setting until 12 cups of broth remain. Add the fish sauce.

Soak the noodles for about 20 minutes until they are not quite soft.

Fill a sauce pan with salted water, and cook the noodles until they are soft, about 3 minutes. Add the cooked noodles to six bowls. Warm the deboned chicken in the broth, and spoon the chicken and broth over the noodles. Serve with lime wedges, Asian sauce, jalapenos, bean sprouts and basil.

Homeade Chicken Pho is ideal as a quick lunch for the kids. It can be stored for two days.
